As the body ages, genetic damage builds up — a simple fact of cellular replication. Our cells can copy and paste themselves dozens of times, dividing to become two, then four, then eight and so on. But when a flaw occurs, serious health problems can result.
“Replication nonstop without quality control, it’s not just cancer,” Chenot’s supervising nutritionist, Simone Gulino, explains. “It’s also neuro-degeneration, it’s metabolic diseases, it’s cardiovascular problems.”
The Chenot Diet® audits cellular operations, temporarily depriving the body of the protein and energy its cells need to reproduce. That pause escalates a phenomenon called autophagy, the process through which cells break down and recycle their defective parts, preventing those abnormalities from repeating in the future. “It’s a hard, aggressive diet,” Gulino says. “It’s not easy to do.” But the results are palpable within days.
Engineered with a perfectionist attention to detail, the fast-mimicking Chenot Diet® delivers 850 calories across three low-protein, vegan meals. It leans heavily on “real seasonality,” according to Gulino; fruits and vegetables high in antioxidants, picked at peak freshness and at precisely the “right moment of the year for nutrient retention.” To keep blood sugar on a gentle curve, chefs use whole grains and ingredients with a low glycemic index, all prepared over low heat with plenty of moisture to eliminate the advanced glycation end products (AGEPs) that accompany roasting and pan-frying. Basically the result of caramelization, AGEPs “add a little bit of sugar to every component of our body,” Gulino says, creating oxidative damage.
Still, Chenot chefs refuse to compromise on flavour. “We don’t skimp on spices, which are a bomb of anti-inflammatory and micronutrition source,” Gulino emphasises. Every aspect of the menu has been exactingly calculated to calm inflammation and upregulate autophagy, but the diet takes between seven and nine days to achieve optimal results. Operating on fewer calories, guests have no choice but to adopt a slower pace. “You’re not going to break any records during the week,” he adds. “You have to work in the areas that you are lacking.”
A bespoke treatment plan relaxes and revitalises the body
To identify those areas, our technicians begin each guest’s stay with an in-depth body composition analysis to measure bone, muscle, and fat density.
Those scores allow guests to “understand what they need, scientifically, to achieve their best shape or prevent complications later on,” Andrea Manucci, an osteopath and physical therapist at Chenot. Manucci focuses on posture and range of motion, correcting the misalignments and muscular weaknesses that can accompany chronic stress. Although Chenot houses a range of state-of-the-art equipment — a NASA-designed anti-gravity treadmill, for example; a Sensopro machine to build stability and improve coordination; a neuromuscular activation system to identify pain points in the myofascial chains that make up our tissue — personal trainers deliberately avoid high-impact, high-intensity workouts in conjunction with the calorie-restrictive diet. “If we push too much, we can reverse the effect instead of helping them feel energised, we can run out the battery,” Manucci explains.
Instead, the goal is to recharge that battery with therapeutic movement, tailored to what the individual needs. To release tension and pain, Manucci aims “to understand their whole picture — it’s very much a holistic approach.” It continues in the spa, where guests enjoy hydrotherapy and mud wraps, a two-part treatment strategy that improves blood circulation, moves lymphatic fluid, and encourages a healthy sweat to draw toxins from the body. Incorporating the principles of Traditional Chinese Medicine, therapists also offer a daily massage, seeking to pinpoint blockages along energetic meridians that flow throughout the body, then using targeted treatments such as acupuncture and cupping to dissolve those pressure points. Every aspect of the method interlocks to bring the body back into harmony, applying enough stress to provoke a response, but “not so much that the body then cannot recover from it,” as Gulino puts it. “It has got to be just right.”

Over the course of a week at Chenot, you will feel your body rise to the challenge.
An initial dip in energy often gives way to a spike by day three, Gulino says, and by the time the programme ends, “you have this feeling of accomplishment, of achievement,” Gulino says, because “you did something for yourself and it was worth the struggle at the beginning. You feel great.” And if you continue to apply the Chenot principles in daily life, the effects build on one another. “As you get more experienced,” Gulino explains, “you have a little bit more energy every time.
