INGREDIENTS
- 40 g cashew nuts
- 200 g fresh broad beans
- 1/2 onion
- 160 g carnaroli rice
- 700 ml vegetable broth
- 4 white asparagus
- Extra virgin olive oil
- Salt
- 20 edamame beans
INSTRUCTIONS
- Prepare the cashew cream: Soak the cashew nuts for 1 hour. Clean the broad beans, blanch them, and remove the skins. Finely chop the onion.
- Sauté & blend: Heat a little olive oil in a frying pan and sauté the onion and broad beans with a pinch of salt. Transfer to a blender, add the drained cashews, and blend until smooth, adding a little water if needed.
- Prepare the asparagus: Peel the white asparagus and slice thinly using a mandoline. Place a sheet of greaseproof paper on a frying pan, lay the asparagus slices on it, cover with another sheet, and cook on low heat for 30 seconds on each side.
- Cook the rice: In a separate pan, cook the carnaroli rice in vegetable broth for 15 minutes. Stir in the creamed broad beans and mix until smooth.
- Assemble the dish.
