Method
Cut the lemon in two and boil it in a saucepan with water. Using a potato peeler, cut the asparagus lengthwise into 2 mm thick slices and immerse them in water and ice.
Prepare the filling. Roast the peppers in the oven at 190°C for 20 minutes, then peel and set aside. Peel the onion, roughly chop it and sauté it in a pan with 1 tablespoon of olive oil. When browned, add the tofu and let it brown, then transfer to a blender, add the peppers and miso and blend well.
Wash the aubergines and grill them on all sides over medium-high heat for about 10 minutes. Let them cool and remove the peel. Blend the aubergine pulp, walnuts, salt and 1 tablespoon olive oil until smooth. Chop the tarragon and mix it with the sauce.
Lay a sheet of foil on the worktop and place 10 slices of asparagus on it, overlapping them along the side without leaving any gaps, then stuff with the filling and gently roll it up, using the foil so that the asparagus rolls up onto itself. When you have finished the roll, trim the ends. Proceed like this for each portion.
With a spoon, spread a strip of sauce onto the centre of the plate, place the roll on it and decorate with nuts and sprouts.
