Chenot Recipe: Broccoli and Lemongrass Cream

This recipe combines the nourishing properties of broccoli with the flavours of lemongrass to create a velvety, health-boosting cream.

Paired with spiced rice chips, it’s not only a feast for the palate but also a testament to the art of mindful cooking.

This dish is rich in nutrients and delivers a balance of comforting warmth and crisp textures, perfect for enhancing your healthy lifestyle.

INGREDIENTS

  • 50 ml coconut milk
  • 200 g vegetable broth
  • 2 kaffir lime leaves
  • 4 lemongrass stems
  • Zest of 1 lime
  • 2 broccoli heads
  • 50 g rice
  • Jalapeño powder (to taste)
  • Paprika (to taste)
  • Garlic powder (to taste)
  • Ginger powder (to taste)
  • 1 sheet of chopped Nori seaweed
  • Salt (to taste)

 

INSTRUCTIONS:

  1.  Infuse the Broth:
    Pour the coconut milk, vegetable broth, kaffir lime leaves, lemongrass, and lime zest into a saucepan. Bring to a boil, then remove from heat and let it infuse for 1 hour. Afterward, strain the liquid into another pan to remove the solids.

  2.  Prepare the Broccoli Cream:
    Wash and stem the broccoli. Bring the infused broth back to a boil and cook the broccoli for 6 minutes. Turn off the heat and blend the mixture until smooth and velvety.

3. Make the Rice Chips:
Cook the rice on low heat for 20 minutes with the lid on. Let it rest for 30 minutes, then blend it with 4 g of salt to create a dough. Preheat the oven to 180°C.

Take half a tablespoon of dough at a time to form small balls, placing them on a baking tray lined with greaseproof paper. Cover the balls with an additional sheet of paper, flatten slightly with your hands, and then roll them out thinly with a rolling pin. Remove the top layer of paper, sprinkle with spices (jalapeño powder, paprika, garlic powder, ginger powder, and chopped Nori seaweed), and bake for 20 minutes or until golden and crispy.

4. Serve:
Pour the broccoli and lemongrass cream into soup plates. Garnish with the spiced rice chips for a delightful crunch.
