ZESTY LEMON DRESSING
Salad dressings don’t have to be complicated to deliver on flavour. This versatile four-ingredient recipe packs a zesty citrus punch every time, and takes less than 60 seconds to prepare from fruit bowl to table.

INGREDIENTS
80g fresh lemon juice
1g salt
40g cold water
1g xanthan gum
Recommended portion size:
30g dressing
METHOD
- Squeeze the lemon
- Mix the lemon juice with the salt, water and xanthan gum in a blender
- Adjust the thickness with more water if needed
