INGREDIENTS
For the soup:
- 400 g parsley roots
- 500 ml water
- 1 tsp olive oil

For the hazelnut crackers:
- 100 g hazelnuts
- 20 g pine nuts
- 1 tbsp lemon juice
- 250 ml water
- 1 pinch of salt

INSTRUCTIONS
To prepare the soup, start by peeling the parsley roots and slicing them into smaller pieces. Heat a teaspoon of olive oil in a pan and sauté the parsley roots until they are lightly golden and aromatic.
Once sautéed, pour in the water, cover the pan, and let the roots simmer gently for 30 minutes. When the roots are soft and tender, blend the mixture until it becomes smooth and creamy.
Set the soup aside while you prepare the crackers.

For the hazelnut crackers, blend the hazelnuts, pine nuts, lemon juice, water, and a pinch of salt in a food processor until a smooth paste forms. Spread this mixture evenly onto a sheet of baking paper, ensuring it is thin and consistent in thickness for even baking. Place the sheet in the oven and bake at 80°C for 3 hours until the crackers are crisp and firm. Once cooled, carefully break the baked mixture into small, cracker-sized pieces.
To serve, pour the creamy parsley root soup into a bowl and place three hazelnut crackers on top for a delightful combination of flavours and textures. Serve warm and enjoy the comforting, nutritious goodness of this elegant dish.
